A taste that brings back memories....
My fondest memories of my grandmother "Tia" are Saturday mornings in her kitchen preparing to bake bread, coconut tart, potato bread, johnny cake or guava duff. There was always a delight on Saturday. I was exciting to knead the goowie dough and then wait to see the golden loaves of bread. As the aroma of freshly baked bread went through the house our stomachs eagerly opened until we are satisfied with a slice of warm bread with butter that melted in our mouths.
My grandmother enjoyed cooking and baking, it was a gift that I certainly did not inherit. Even though I loved the freshly baked bread her coconut tart was my absolute favorite. I could remember finely grating the hard coconut then watching my grandmother cook the coconut with sugar and water until it was darken. As she spread the cooked coconut on to the cake batter, I would always look forward to eating just the sweet coconut off the spoon. The taste of coconut today brings back memories.

My Grandmother's Coconut Tart Recipe
"A taste that brings back memories "

Filling:
- 1 large coconut, grated
- 1 cup of sugar
- 1 cup of water
In a large saucepan place all ingredients, cook over high heat until water is evaporated.
Continue to cook until coconut is medium dark brown. Set cooked coconut aside.
- 3 cups of all purpose flour
- 1 cup of sugar
- 3/4 cup of shortening or butter
- 1 cup of milk
- 3 tsp. of baking powder
- 1 tsp. of salt
- 1 tsp. vanilla extract
- 3 eggs
In a large bowl, measure all ingredients. With a mixer at low speed, beat ingredients until well mixed. Increase speed to high: beat 3 minutes, occasionally scraping the bowl.
In a 9 inch greased flour cake pan pour half of the cake mixture. Spoon coconut filling evenly over mixture then cover with the remaining cake mixture.
Bake for 1 hour at 350℉
Let cool for 20 minutes, in pan
